This role is pivotal in delivering an exceptional fine dining experience. The Line Cook plays a key role in delivering a great guest experience by expertly preparing, portioning, and executing recipes to the highest standard. Working under the guidance of the Executive Chef, this position is responsible for ensuring food quality, consistency, and presentation. From prepping ingredients to plating and garnishing dishes, the Line Cook supports back-of-house operations by ensuring each plate meets our culinary standards before it reaches the guest.

Essential Functions / Major Responsibilities:
  • Prepare and cook menu items in accordance with standardized recipes and portion guidelines, using a variety of kitchen equipment and techniques. 
  • Wash, peel, cut, and prep fruits, vegetables, and other ingredients for service. 
  • Assemble, portion, and garnish dishes based on plating standards and the Executive Chef’s direction.
  • Monitor food quality and doneness through tasting, smelling, and other testing methods. 
  • Regulate cooking temperatures and timing for ovens, grills, fryers, and other equipment to ensure proper food preparation. 
  • Maintain clean and sanitary workstations, tools, and kitchen equipment in compliance with health and safety standards. 
  • Properly store food items, ensuring correct labeling, rotation, and temperature control. 
  • Collaborate with front-of-house staff to ensure timely and accurate fulfillment of guest orders. 
  • Follow all food safety and sanitation protocols, including wearing appropriate protective gear and handling food properly. 
  • Promptly report any safety hazards, equipment issues, or health concerns to the supervisor.
 
Required Skills / Abilities / Competencies:
  • Strong understanding of basic cooking techniques, kitchen equipment, and food safety procedures.
  • Ability to follow recipes and portion guidelines accurately and consistently.
  • Ability to communicate effectively with management and staff.
  • Ability to work efficiently in a fast-paced and demanding environment.
  • Strong attention to detail and commitment to maintaining cleanliness standards.
  • Strong organizational and time management skills.
  • A passion for hospitality and a desire to inspire guests to embrace diverse cultures and cuisines.

Education and Experience:
  • Must be at least (18) years of age.
  • Possess a current Food Handler’s certification before starting work.
  • Minimum of two (2) years’ experience in kitchen prep and cooking in a fine dining or upscale casual environment.
  • Experience cleaning and maintaining a commercial kitchen is a plus.
 
Work Environment:
  • Working during evenings, weekends, and holidays to accommodate peak dining hours.
  • Fast-paced environment requiring quick movements and efficiency in tight, confined workspaces.
  • Handling and transporting dishware, glassware, and kitchen equipment in wet and sometimes slippery conditions.
  • Collaborating with a diverse team of front-of-house and back-of-house staff in a structured yet flexible atmosphere.
 
Physical Requirements:
  • Must be able to stand for periods of up to eight (8) hours. 
  • Must have the strength and endurance to handle repetitive motions, such as leaning over and bending, and be capable of lifting objects weighing up to fifty (50) pounds. Required to use assistance when available i.e. hand trucks, ramps, or another team member.
  • The ability to stand for extended periods and perform physically demanding tasks, including lifting and maneuvering dishes, utensils, pots, and pans.
